We have done steelies this way before and had them last night on the grill.

All we did was put a fillet cut in half onto a sheet of aluminum foil. A littel olive oil, salt, pepper, 1 whole onion minced chunky spread over the top of the fish. 1/3 jar of salsa sauce, 4 tablespoons of barbecue sauce, and just a little wasabi on top of the onions. Then just close up the foil fairly tight and let her cook on the grill till flaky. all the ingredients cook down during this process and is really tasty and simple.

I did some steelhead on the grill also Ed yesterday. Your plan sounds better than mine though. I bought some Cabela brand trout and salmon seasoning awhile back and tried it out. I sprinkled the stuff liberally on the fillets after brushing them with olive oil. I added some lawery salt and some old bay seasoning also. I grilled till done the I prefer them. I was somewhat surprised that they tasted darn good. Had a sweet taste to it. It would be good cold served on deli crackers I think.

I've got some brining now that will go in the smoker tomorrow will report how they come out

Hey Don,

I heard it was a real sweat box for you the other day. Be glad the vampire flies weren't out.

With the MS I had to cut out alot of the mixed seasonings, they tore me up and sometimes cause me migraines.

So we have been using a lot of natural foods to add some spice and punch to our fish. Took alittle time to convert but try that recipe once and let me know your thoughts.

I will try your recipe next. Don't know about the wasabi though. Yeah it was hot. Bob's boat canvas and glass made the helm an easy bake oven. I was wet to my knees. In between fish fights Bob was hosing himself off with his onboard garden hose and I was soaking towels in the lake and wrapping them around my neck. Just a little breeze would have made it tolerable. Hey, we made it in with a box full of fish and I wouldn't have changed a thing. When the bite is on it is amazing how you forget that you are miserable.

Just glad you had a good day. Heck Don, think about it this way. How much money would it cost to go to a suana,after a work out in the gym. You got that and more, and had a blast while doing it.

Wasabi some my not care for got to go easy with it, as it does have alittle bite :woohoo: . I'm partial to that and horse radish.
